healthy strawberry + avocado toast


I’m so excited it’s Saturday, and today I’m sharing my first Clean Eats post!

Now I know you’re probably thinking “avocado?! ewwwwww!” and believe me, it’s still a taste that I’m getting used to myself but this is the perfect recipe to get used to it!

Avocado is one of those amazing superfoods that can be used many different ways, but as I’m just starting out with avocado I’ve been using it as a spread! This recipe is the perfect breakfast recipe and is surprisingly very filling!

It’s also quick + easy, and with minimal effort you can have a nutritiously rich breakfast that’s also delicious.

You will need:

  • 1 medium avocado
  • 2 pieces toast
  • 1/2 cup sliced strawberries
  • cutting board
  • spoon
  • knife
  • toaster


Step One:

Put your 2 pieces of toast in the toaster, and toast to your desired taste! I like mine a little crunchy, but not burnt.

Step Two: 

Next, get out your avocado. To correctly dress your avocado, notice how it’s shaped kind of like an egg! Start at the “tip” of the avocado (the pointed top of your avocado) and with your knife make a full slice all the way around it.

The next step is less tricky than it sounds, so relax! The avocado is split in two, but still intact. Take both of your hands on each half, and twist (it doesn’t matter which direction your twist.) while pulling them apart.

Now that you have the avocado in two pieces, carefully pry the seed out of whichever side it is on with your knife.

Once the seed is out, with your knife (on each side) run your knife lengthwise into the flesh of the avocado about four or five times, and then do it again widthwise. It should now look similar to graph paper!

Once you have done this to each side, squeeze each side and let the chunks you created mush out onto your cutting board.

With your spoon, mash everything you squeezed out into a paste that looks similar to the consistency of peanut butter! (technically you could have it chunky, but i find it works better at least on this recipe smooth.)

Step Three:

Wash your strawberries and then slice them lengthwise, until you have 1 cup.

Step Four: 

Hopefully you didn’t forget about your toast! Put your pieces of toast on a plate, and now the fun begins!

Step Five:

Divide your mashed avocado into two halves, equally, and spread on your fresh warm toast.

Step Six:

Now place as many of the strawberry slices you want on your toast – and you’re done!

It’s actually much faster than you’d think, I timed myself the other day and have everything done in less than five minutes!

I also found that I don’t use the whole 1/2 cup of strawberries on my toast, but I do like to have some extra so that I can eat the remaining strawberry slices when I’m done with the toast – it’s delish!
